         A commitment to 'ONE HEALTH'

Food Hygiene:
Food hygiene training is fundamentally important. All personnel should be aware of their role and responsibility in protecting food from contamination or deterioration. Food handlers should have the necessary knowledge and skills to enable them to handle food hygienically. 
Systems should be in place to ensure that food handlers remain aware of all procedures necessary to maintain the safety and suitability of food. All personnel involved in the food chain must be given training on all the aspects of food hygiene to produce food with safety. Training programs should be routinely reviewed and updated where necessary. 


Program Goal(s):
The 5 weeks program provides knowledge and skills in food handling. Food borne illness and food borne injury are unpleasant; they can be fatal.

Program Outline:

Module 1- Primary Production:
-Establishment: Design and Facilities,
-Location,
-Equipment,
-Premises and rooms,
-Internal structures and fittings,
-Water supply &
-Drainage and waste disposal.

Module 2- Primary Production:
-Establishment: Design and Facilities,
-Cleaning,
-Personal hygiene,
-Temperature control,
-Air quality and ventilation,
-Lighting,
-Storage &
-Facility Requirements for
Good Manufacturing Practices (GMP) Status.

Module 3- Control of Food Operation:
-Control of Food Hazards &
-Time and temperature control.

Microbiological and other specifications: 
-Microbiological cross contamination,
-Physical and chemical contamination,
-Incoming material requirements,
-Packaging &
-Water.

Module 4-Management and supervision:
-Documentation and records,
-Recall procedure.

Establishment Maintenance and sanitation:
-Maintenance and Cleaning,
-Cleaning procedures and methods,
-Cleaning programs,
-Pest control systems,
-Waste management &
-Monitoring effectiveness.

Module 5- Food Establishment:
-Personal hygiene
-Health status,
-Personal cleanliness,
-Personal behavior,
-Visitors,
-Transportation,
-Product information and consumer awareness &
-Training.

 COURSE DURATION
5 weeks.

COURSE FEE: 25 USD

COURSE REQUIREMENT(S):
Open to all.

Mode of Instruction: Online (Machine Learning, Self-Paced).

INTENDED AUDIENCE:

REGISTRATION: Food Hygiene

Certification: A digital certificate is obtainable upon achievement of 80% overall.
